ADRIAN MULÉ

GENERAL MANAGER

In his role as General Manager, Adrian works with other specialists in their field to support cafés and ensure the quality and integrity of our brands. Adrian has a hands on approach and is always looking for the best operating systems for our group.

​Adrian grew up in the hospitality industry and since he was young has always wanted to pursue a path to own his own café business.  

Since then he has  continued to grow with the company, including owning and operating a variety of stores and assisting Franchise Partners to run their own. In 2009 he opened Nine Bars coffee roasting warehouse in O’Connor, Western Australia, with his brother David. Adrian’s passion for the hospitality industry and his eagerness to learn has been instrumental in the success of the company.

ALICIA MULÉ

BUSINESS DEVELOPMENT MANAGER

Alicia studied Media and Communications at Murdoch University and gained voluntary work experience in all areas from accounts to the news room at Perth’s RTRFM, 96FM and 6PR. She  became the country’s youngest ever Station Manager of youth community radio station Groove 101.7FM in 2003.

After relocating to Melbourne she identified opportunities in some of Australia’s largest university and TAFE campuses and soon began developing cafés to expand into Victoria and Queensland.

Alicia has a passion for hospitality and working with a talented and creative team. Alicia’s goal is to develop new and innovative food concepts that serve quality food and coffee in spaces that people around Australia love.

DAVID MULÉ

DIRECTOR OF COFFEE

David is passionate about coffee and manages Nine Bars coffee roasting warehouse in O’Connor, Western Australia. After years of studying, travelling and learning everything there is to know about coffee sourcing and roasting, David established the roastery in 2009 with his brother, Adrian.
​
David has been the leading force behind many coffee awards received for all our brands. In March 2016 David Mulé created a blend from Bolivian and Rwandan beans that was voted best in the country at the prestigious Australian International Coffee Awards. The blend won Champion Milk Based Coffee against more than 210 entries from national and overseas competition.

RUTH MACSIMOIN

NATIONAL OPERATIONS MANAGER

As a kitchen expert, Ruth manages recipe development, compliance and training for the kitchen and back of house.

​Ruth is a qualified chef with over eight years’ experience in the hospitality industry.

She studied professional cookery at the Dublin Institute of Technology and has applied this knowledge in a variety of Perth’s best kitchens and cafes.

CHRIS PASQUALE

ADMINISTRATION Manager

Chris brings a desirable set of skills to the support office, having studied finance and management at Curtin University.
 
Coming from a background of hospitality management, finance and IT, Chris is responsible for the deployment and maintenance of all systems, administration and supplier relationship management.

​EMILEE-JO DONALD​

OPERATIONS SUPPORT 

Emilee has over five years experience in café management. She has assisted several large teams in busy café and coffee roasting venues across Perth and has a high standard of customer service and coffee making.

​Emilee also has a keen eye for fine art, design, marketing and social media, assisting with the maintenance of high levels of presentation across all of our cafes.

JAMES NICHOLAS

BARISTA TRAINER

Hailing all the way from Southampton, UK, James is fresh to Australia but joins our team with an abundance of experience in the coffee industry!

For the last five years he has been working as a barista, head barista and barista trainer. He strives to constantly improve and is always looking forward to the next challenge; competing in various competitions, coaching competitors and also judging.
