Bon Ton: Reinventing a Perth Icon


The revival of Bon Ton is a defining move by The Café Collective, bringing Perth CBD heritage into a contemporary campus setting.


Positioned for high quality grab-and-go dining in the Perth CBD, Bon Ton delivers:


  • Elevated sandwiches, focaccias and wraps, made fresh daily

  • Comfort driven hot food including traditional pizzas and house made sausage rolls

  • Premium supplier partnerships with Mary Street Bakery and Gather Bakehouse


The concept blends nostalgia with functionality, anchoring the ground floor with a venue that is both efficient and experience-led.



Grindhouse: Scaling Specialty Coffee


With roots in the Western Australian Academy of Performing Arts, Grindhouse has been reimagined by The Café Collective into a cornerstone of specialty coffee in Perth CBD.

Key to the strategy is in-house roasting, supplying all venues and ensuring:

  • Seasonal rotation of single-origin coffees

  • Access to specialty-grade microlots (88+)
