ADRIAN MULÉGENERAL MANAGERIn his role as General Manager, Adrian works with other specialists in their field to support cafés and ensure the quality and integrity of our brands. Adrian has a hands on approach and is always looking for the best operating systems for our group.
Adrian grew up in the hospitality industry and since he was young has always wanted to pursue a path to own his own café business. Since then he has continued to grow with the company, including owning and operating a variety of stores and assisting Franchise Partners to run their own. In 2009 he opened Nine Bars coffee roasting warehouse in O’Connor, Western Australia, with his brother David. Adrian’s passion for the hospitality industry and his eagerness to learn has been instrumental in the success of the company. |
ALICIA MULÉBUSINESS DEVELOPMENT MANAGERAlicia studied Media and Communications at Murdoch University and gained voluntary work experience in all areas from accounts to the news room at Perth’s RTRFM, 96FM and 6PR. She became the country’s youngest ever Station Manager of youth community radio station Groove 101.7FM in 2003.
After relocating to Melbourne she identified opportunities in some of Australia’s largest university and TAFE campuses and soon began developing cafés to expand into Victoria and Queensland. Alicia has a passion for hospitality and working with a talented and creative team. Alicia’s goal is to develop new and innovative food concepts that serve quality food and coffee in spaces that people around Australia love. |
DAVID MULÉDIRECTOR OF COFFEEDavid is passionate about coffee and manages Nine Bars coffee roasting warehouse in O’Connor, Western Australia. After years of studying, travelling and learning everything there is to know about coffee sourcing and roasting, David established the roastery in 2009 with his brother, Adrian.
David has been the leading force behind many coffee awards received for all our brands. In March 2016 David Mulé created a blend from Bolivian and Rwandan beans that was voted best in the country at the prestigious Australian International Coffee Awards. The blend won Champion Milk Based Coffee against more than 210 entries from national and overseas competition. |
CHRIS PASQUALEADMINISTRATION ManagerChris brings a desirable set of skills to the support office, having studied finance and management at Curtin University.
Coming from a background of hospitality management, finance and IT, Chris is responsible for the deployment and maintenance of all systems, administration and supplier relationship management. |
JOSEPH DrABBLENATIONAL OPERATIONS MANAGERA seasoned hospitality professional with a career spanning two decades. Joe completed his hospitality management qualifications in 1999.
Since then, he has owned several different hospitality businesses and has held management roles in large national hospitality companies. Joe’s passion for all aspects of hospitality, together with his wealth of experience give him the tools to assist franchisees in achieving financial success and outstanding customer satisfaction. |
RUTH MACSIMOINOPERATIONS MANAGERAs a kitchen expert, Ruth manages recipe development, compliance and training for the kitchen and back of house.
Ruth is a qualified chef with over eight years’ experience in the hospitality industry. She studied professional cookery at the Dublin Institute of Technology and has applied this knowledge in a variety of Perth’s best kitchens and cafes. |
Michael BurrowsOPERATIONS MANAGERMichael has over fifteen years experience as manager and head barista of cafes, bars and restaurants in Perth and London.
After managing a venue during the 2012 Olympics and running the cafe at one of London's leading theatres for ten years, Michael moved back to Perth and joined the Cafe Collective team in 2022. As a published author with a background in the arts, Michael enjoys finding creative ways to help wherever he can. Her chef life began in an award winning boutique hotel in the Irish countryside over 20 years ago, leading her to venture into fine dining and a la carte. Over the years she has developed a passion for slow food and using locally produced foods to create new menu items.
